Edible Insects: Introducing Students to Sustainable Food Sources

On April 22, AIS Vienna celebrated Earth Day in both the High School Environmental Science and Advanced Research classes by learning about edible insects. ZIRP, a Vienna based company, held a presentation on the history of entomophagy – students were shocked to learn that 2 billion people worldwide have insects as part of their regular diet. Compared to other protein sources, insect protein creates far fewer greenhouse gasses and requires significantly less water and arable land. Students tried protein bars and brownies from ZIRP to rave reviews. Students were inspired by this innovative, locally based idea to reduce our emissions.
